Unlike the non-vintage Fallet-Dart champagnes, the Millésime brut is made from the grapes of one single year’s harvest which is of exceptional quality. Chardonay from the parcel called les Malivas, gives an exceptional freshness and an aromatic finesse to the Millésime brut. Some of the best Pinot noir is also incorporated into this blend. Partly vinified in oak barrels, this wine shows great elegance and complexity, balancing freshness and a light note of brioche. At least 7 years of ageing in in the Fallet-Dart cellars are needed to obtain this distinguished millésime champagne, time works its magic and it reaches a full-bodied maturity.
Blending: Chardonnay 70%, Pinot noir 30%
Fermentation: Alcoholic and Malolactic in stainless steel tanks and oak barrels
Ageing: 7 years
Post disgorging resting period: 8 – 12 months
Recommended keeping time: 5 years

Aperitifs: on its own or with verrines, salmon on toast, scallops or delicate fish.
